The freshness problem

Coffee doesn't age.
It dies.

The moment coffee leaves the roaster, a clock starts. For a few glorious days it's at its peak — then oxygen goes to work, and within weeks the bean is a shadow of itself. Origin, grind, brew method: they all matter. But nothing matters more than time since roast — and it's the one thing no supermarket bag can give you.

That's why the freshest coffee on earth isn't sold roasted at all. It's roasted by you, days before you drink it — or by us, the same week it ships.

Antioxidants, at full strength

Coffee is one of the richest sources of antioxidants in the modern diet — compounds like chlorogenic acids that are most abundant right after roasting and degrade as the bean oxidizes and staling sets in.

Roasting creates hundreds of volatile aromatics — everything you smell and most of what you taste. They begin escaping the moment the roast ends, and once the bean is ground, they're gone in minutes.

The lift, not the bite

Fresh coffee drinks clean, sweet, and bright. Stale coffee leans on bitterness and papery flatness — so you sugar it, cream it, and chase the flavor it lost months ago.

  1. Hour 0

    Roast day

    First crack. Hundreds of aroma compounds bloom and the bean breathes out CO₂. Coffee is never more alive than right now.

  2. Days 1–4

    The peak

    Rested and degassed. Flavor, aroma, and antioxidant content at their height. This is the window most coffee drinkers have never tasted.

  3. Day 7

    The fade begins

    Oxidation sets in. Aromatics thin out, oils dull, sweetness flattens. Still decent — but the magic is leaving.

  4. Week 3

    Stale

    Flat, papery, bitter-leaning. The caffeine remains; the character — and much of what made it worth drinking — is gone.

  5. Month 6

    The supermarket bag

    The typical age of grocery-store coffee by the time it hits your cup. It didn't age gracefully. It died in the bag.

Good questions

Why does fresh-roasted coffee matter so much?

Roasted coffee is produce. It peaks in the first days after roasting — when its aromatics and antioxidant compounds are at full strength — and fades noticeably within a week or two as oxygen breaks it down. Most store-bought coffee is six months to a year old by the time it's brewed. Roast it yourself, or brew ours within days of the drum, and you're tasting coffee as it was meant to be: the freshest coffee you've never had.

I've never roasted coffee. Can I still join?

Absolutely. Choose the roasted option on any tier and we'll roast the month's lot for you. If you ever want to try roasting, a heavy skillet or a popcorn popper is an honest start — every box includes a beginner's roast guide.

How fresh are the green beans?

We buy current-crop lots only, typically landed within a few months of harvest, and store them in climate-controlled conditions in GrainPro-lined bags until your box ships.

Can I switch between green and roasted?

Anytime, from your member portal — even month to month. Enthusiast and Roastmaster members can also split the bag.

When do boxes ship?

Boxes ship the second week of each month. Roasted boxes ship within 48 hours of roast day so they land at peak freshness.

Can I pause or cancel?
